Billy Bob is one of a kind in Dubai bringing a fifties retro American dining style to the streets in Business Bay. You cannot miss Billy Bob with their Car-hop girls Bopping around on their rollerblades. Also known as Rollerstesses (roller blading waitresses), this fun aspect of Billy Bob is one of the things that sets it apart from the rest.
Besides this, they offer some of the best sandwiches in town, using only the freshest of ingredients in their dishes that are all selected with care, and prepared with passion. Our job was to hunt down the perfect Rollerstesses & get them to Dubai, organize their trainings & skills in waitressing on wheels. The management at Billy Bobs then underwent trainings in our Standard operating systems & armed with Operations manuals, Billy Bob’s opened doors in the first quarter of 2014.
Their décor and personality go hand in hand with their fifties theme. When you step inside you will notice the cheer and outgoing staff with the classic country music playing in the background all day long.
